The Story of Constance

Constance Fromagerie & Café was born from a lineage of creativity, care, and the belief that food is more than something we eat — it’s something we feel.

Founder and food artist Rachel Balko grew up inspired by her grandmother, Constance, a woman whose kitchen was a sanctuary of warmth, beauty, and gentle abundance. Constance taught Rachel that hospitality isn’t about perfection — it’s about presence. It’s about welcoming people in, feeding them well, and making them feel cared for. That quiet, powerful matriarchal energy lives at the heart of everything we do.

Before opening the doors to Constance, Rachel spent over 17 years in the restaurant and hospitality world across Ohio and New York City. Her path wasn’t linear — it was artistic. With a Master’s degree in Voice Performance and a decade on stage as a professional singer and actor, Rachel learned how to tell stories, create atmosphere, and craft moments that move people. When she shifted from performing to food, she brought all of that artistry with her.

What began as West Side Charcuterie — a boutique catering brand known for its lush grazing tables and art-forward platters — has grown into a brick-and-mortar home where community, creativity, and connection come together. Today, West Side Charcuterie continues as our dedicated catering arm, while Constance Fromagerie & Café serves as both our kitchen and our gathering place.

At Constance, we believe cheese is a love language. We believe food can be a conversation starter, a moment of rest, a spark of joy, or a reason to gather. Every board, every latte, every petite pot is crafted with intention: to slow people down, bring them together, and make the ordinary feel a little more beautiful.
